Description
Oven Roasted Yukon Gold Potatoes with Onions are a simple yet flavorful side dish featuring golden, crispy potatoes and sweet caramelized onions, seasoned with herbs and roasted to perfection. Ideal for pairing with almost any main course.
Ingredients
Scale
- 2 pounds Yukon Gold potatoes, cut into 1-inch cubes
- 1 large yellow onion, sliced
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme (or rosemary)
- Optional: chopped fresh parsley for garnish
Instructions
- Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or foil for easy cleanup.
- In a large bowl, combine the cubed potatoes and sliced onions. Drizzle with olive oil and toss to coat evenly.
- Sprinkle the salt, pepper, garlic powder, and thyme over the mixture. Toss again to distribute the seasonings.
- Spread the potatoes and onions in a single layer on the prepared baking sheet.
- Roast for 30–35 minutes, tossing once halfway through, until the potatoes are golden brown and crispy on the edges and the onions are caramelized.
- Remove from the oven, garnish with chopped parsley if desired, and serve warm.
Notes
- For extra crispiness, avoid overcrowding the pan—use two sheets if needed.
- Yukon Gold potatoes are ideal for roasting due to their creamy texture and thin skin.
- Leftovers can be reheated in a skillet or air fryer for maximum crispness.
