Description

Delight in the rich umami flavors of pan-fried mushrooms, perfectly complemented by miso and a luscious egg yolk. This dish is a quick and easy gourmet treat, ideal for breakfast, brunch, or as a savory snack. Serve with toasted ciabatta for the ultimate indulgence.


Ingredients

  • 150 grams mixed exotic mushrooms (such as porcini, King Oyster, shimeji, or shiitake), sliced and chopped into similar medium-sized pieces
  • 30 grams salted butter
  • 1 teaspoon fresh thyme leaves, stripped from the stalk and chopped
  • 2 teaspoons miso paste
  • 2 garlic cloves, crushed
  • 1 large or extra large free-range egg yolk
  • Freshly grated Parmesan cheese, to serve
  • A sprinkle of finely chopped flatleaf parsley
  • Toasted ciabatta or other good bread

Instructions

  • Heat the skillet: Heat a non-stick skillet over medium-high heat and melt the butter.
  • Sauté the mushrooms: Add the mushrooms and thyme, sautéing until they start to brown on both sides. If necessary, increase the heat to achieve a sear on the mushrooms.
  • Add the miso and garlic: Incorporate the miso and garlic, tossing continuously to combine.
  • Finish with the egg yolk: Once the mushrooms are browned and softened but still a little firm, dish them onto a plate. Add the egg yolk and toss to coat the mushrooms.
  • Serve: Sprinkle with Parmesan cheese and a little parsley, if desired, and serve with crispy toast.
