For the Cod:
- 1 1/2 pounds fresh cod, cut into 4 fillets
- Additional salt and pepper for seasoning
Instructions
- Prepare the Tomato Basil Sauce:
- Heat olive oil in a sauté pan. Add crushed red pepper flakes and minced garlic, sautéing for about 1 minute.
- Add halved cherry tomatoes and cook for 9-12 minutes until softened.
- Pour in vegetable broth and 1 tablespoon of lemon juice, simmer gently.
- Stir in basil, remaining lemon juice, lemon zest, salt, sugar, and black pepper, cooking for 2 more minutes.
- Cook the Cod:
- Pat cod fillets dry, season with salt and pepper.
- In a separate pan, heat olive oil and sear the fillets for 3 minutes on each side until golden brown and flaky.
- Combine and Serve:
- Pour the tomato basil sauce over the cod and warm through for a minute.
- Serve with pasta, rice, or a fresh salad.
