  • 1/2 cup fresh basil, finely chopped
  • 1/2 teaspoon lemon zest
  • 1/2 teaspoon salt (more to taste)
  • 1 teaspoon granulated sugar
  • 1/4 teaspoon fresh ground black pepper (more to taste)

For the Cod:

  • 1 1/2 pounds fresh cod, cut into 4 fillets
  • Additional salt and pepper for seasoning

Instructions

  • Prepare the Tomato Basil Sauce:
    • Heat olive oil in a sauté pan. Add crushed red pepper flakes and minced garlic, sautéing for about 1 minute.
    • Add halved cherry tomatoes and cook for 9-12 minutes until softened.
    • Pour in vegetable broth and 1 tablespoon of lemon juice, simmer gently.
    • Stir in basil, remaining lemon juice, lemon zest, salt, sugar, and black pepper, cooking for 2 more minutes.
  • Cook the Cod:
    • Pat cod fillets dry, season with salt and pepper.
    • In a separate pan, heat olive oil and sear the fillets for 3 minutes on each side until golden brown and flaky.
  • Combine and Serve:
    • Pour the tomato basil sauce over the cod and warm through for a minute.
    • Serve with pasta, rice, or a fresh salad.
