- 4 cod fillets
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 2 cups cherry tomatoes, halved
- 1 can (14.5 oz) diced tomatoes
- 1/2 cup fresh basil leaves, chopped
- 1/4 cup dry white wine
- Salt and pepper, to taste
- Lemon wedges for serving
Instructions
- Season the Cod:
Season the cod fillets with salt and pepper on both sides. - Pan-Sear the Cod:
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the cod fillets and cook for 3-4 minutes on each side, until golden brown and cooked through. Remove from the skillet and set aside. - Sauté Aromatics:
In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onion and minced garlic, sautéing for 2-3 minutes until softened and fragrant. - Cook the Tomatoes:
Add the cherry tomatoes to the skillet and cook for another 3 minutes, allowing them to soften and begin breaking down. - Make the Sauce:
Stir in the diced tomatoes, white wine, and half of the chopped basil. Lower the heat and let the sauce simmer for about 10 minutes, allowing the flavors to meld. - Finish Cooking the Cod:
Return the cod fillets to the skillet, spooning the tomato basil sauce over the top. Simmer for another 2-3 minutes to reheat the fish and let it absorb the flavors. - Serve:
Serve the cod fillets with the tomato basil sauce spooned over the top. Garnish with the remaining fresh basil and lemon wedges.
