Description

This delightful dish features flaky cod fillets pan-seared to perfection and served in a vibrant tomato basil sauce, perfect for a quick weeknight dinner or a special occasion.


Ingredients

  • 4 cod fillets
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups cherry tomatoes, halved
  • 1 can (14.5 oz) diced tomatoes
  • 1/2 cup fresh basil leaves, chopped
  • 1/4 cup dry white wine
  • Salt and pepper, to taste
  • Lemon wedges for serving

Instructions

  • Season the Cod:
    Season the cod fillets with salt and pepper on both sides.
  • Pan-Sear the Cod:
    Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the cod fillets and cook for 3-4 minutes on each side, until golden brown and cooked through. Remove from the skillet and set aside.
  • Sauté Aromatics:
    In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onion and minced garlic, sautéing for 2-3 minutes until softened and fragrant.
  • Cook the Tomatoes:
    Add the cherry tomatoes to the skillet and cook for another 3 minutes, allowing them to soften and begin breaking down.
  • Make the Sauce:
    Stir in the diced tomatoes, white wine, and half of the chopped basil. Lower the heat and let the sauce simmer for about 10 minutes, allowing the flavors to meld.
  • Finish Cooking the Cod:
    Return the cod fillets to the skillet, spooning the tomato basil sauce over the top. Simmer for another 2-3 minutes to reheat the fish and let it absorb the flavors.
  • Serve:
    Serve the cod fillets with the tomato basil sauce spooned over the top. Garnish with the remaining fresh basil and lemon wedges.

Notes

Serve with rice or crusty bread to soak up the delicious sauce.
