Description

These Parmesan Baked Potatoes are crispy on the outside and tender on the inside, coated with a delicious blend of Parmesan cheese, garlic, and herbs. A perfect side dish for any meal!

Ingredients

Scale
  • 4 large russet potatoes, scrubbed and cut into wedges
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme (or rosemary)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat the oven:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Prepare the Potatoes:
Cut the scrubbed potatoes into wedges. Try to keep the pieces as uniform as possible for even cooking.
In a large bowl, toss the potato wedges with olive oil, garlic powder, dried thyme (or rosemary), salt, and pepper until evenly coated.
  3. Coat with Parmesan:
Sprinkle the grated Parmesan cheese over the potato wedges and toss gently to coat. This will give the potatoes a crispy, cheesy crust when baked.
  4. Bake the Potatoes:
Arrange the coated potato wedges in a single layer on the prepared baking sheet.
Bake for 35-40 minutes, flipping the wedges halfway through, until the potatoes are golden brown and crispy on the outside and tender on the inside.
  5. Garnish and Serve:
Remove from the oven and sprinkle with chopped fresh parsley for added color and flavor (optional). Serve immediately as a side dish with your favorite main course.

Notes

  • You can add a sprinkle of extra Parmesan cheese halfway through baking for an extra cheesy crust.
  • If you want a spicier kick, add a pinch of red pepper flakes to the seasoning mix.
  • These potatoes are great for meal prep – simply reheat them in the oven to retain their crispiness.
