Description

  • 2 pounds baby potatoes (or any small potatoes)

  • 3 tablespoons olive oil (or melted butter)

  • 4 cloves garlic, minced

  • 1 tablespoon fresh rosemary, finely chopped (optional)

  • 1 tablespoon fresh parsley, chopped (for garnish)

  • 1/2 teaspoon red pepper flakes (optional, for a kick)


Instructions

  1. 1. Preheat the Oven:

    • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.

    2. Cook the Potatoes:

    • Place the potatoes in a large pot and cover with cold water. Add a pinch of salt and bring to a boil. Reduce the heat and simmer for about 12-15 minutes, or until the potatoes are fork-tender.

    • Drain the potatoes and let them sit for a few minutes to dry out.

    3. Smash the Potatoes:

    • Once the potatoes are slightly cooled, use the back of a fork or a potato masher to gently smash each potato. You want them to stay mostly intact but have a smashed appearance (don’t mash them too much).

    4. Season the Potatoes:

    • In a small bowl, mix the olive oil (or melted butter) with the minced garlic. Brush or drizzle this mixture over the smashed potatoes.

    • Sprinkle the Parmesan cheese evenly over the top and season with salt and pepper. Add fresh rosemary if using for extra flavor.

    5. Roast the Potatoes:

    • Place the baking sheet with the smashed potatoes in the preheated oven and roast for 20-25 minutes, or until the edges of the potatoes are crispy and golden-brown.

    • For extra crispiness, you can broil the potatoes for 2-3 minutes at the end, watching carefully so they don’t burn.

    6. Serve:

    • Remove the potatoes from the oven and garnish with fresh parsley and a sprinkle of extra Parmesan if desired.

    • Serve immediately and enjoy!
