Description

These Party Potatoes are the ultimate crowd-pleaser! Creamy, cheesy, and perfectly seasoned, these potatoes are loaded with flavor and make a great side dish for any occasion. Whether it’s for a holiday, BBQ, or family gathering, these potatoes are sure to steal the show!


Ingredients

  • 3 lbs baby potatoes (or russet potatoes, cut into 1-inch cubes)
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1/4 cup milk
  • 2 cups shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon (optional, for extra flavor)
  • 1/2 cup chopped green onions or chives
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper, to taste

 

  • 1 tablespoon fresh parsley, chopped (optional, for garnish)

Instructions

  1. Prepare the Potatoes: If using baby potatoes, wash them thoroughly and cut them in half. If using russet potatoes, peel them (optional) and cut them into 1-inch cubes.
  2. Bring a large pot of salted water to a boil. Add the potatoes and cook for 10-12 minutes, or until fork-tender. Drain the potatoes and set them aside to cool slightly.
  3. While the potatoes are cooling, in a large mixing bowl, combine the sour cream, mayonnaise, milk, garlic powder, onion powder, paprika, salt, and pepper. Stir until smooth and well combined.
  4. Add the cooked potatoes to the bowl with the creamy mixture and gently fold them to coat the potatoes evenly.
  5. Stir in the shredded cheddar cheese, crumbled bacon (if using), and chopped green onions or chives.
  6. Transfer the mixture to a greased 9×13-inch baking dish.
  7. Top with additional shredded cheese, if desired, and bake at 375°F (190°C) for 20-25 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven and garnish with fresh parsley, if desired. Serve warm and enjoy!

Notes

  • You can make these potatoes ahead of time and refrigerate them until ready to bake. Just add 5-10 extra minutes to the baking time if they are cold from the fridge.
  • If you prefer a lighter version, use Greek yogurt instead of sour cream and light mayo.
  • Feel free to add other toppings, such as jalapeños for a spicy kick, or sautéed onions for added flavor.

 

  • You can substitute the cheddar cheese with a blend of your favorite cheeses, like Monterey Jack or mozzarella.
