Ingredients
Scale
- 3 lbs baby potatoes (or russet potatoes, cut into 1-inch cubes)
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1/4 cup milk
- 2 cups shredded cheddar cheese
- 1/2 cup cooked and crumbled bacon (optional, for extra flavor)
- 1/2 cup chopped green onions or chives
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper, to taste
- 1 tablespoon fresh parsley, chopped (optional, for garnish)
Instructions
- Prepare the Potatoes: If using baby potatoes, wash them thoroughly and cut them in half. If using russet potatoes, peel them (optional) and cut them into 1-inch cubes.
- Bring a large pot of salted water to a boil. Add the potatoes and cook for 10-12 minutes, or until fork-tender. Drain the potatoes and set them aside to cool slightly.
- While the potatoes are cooling, in a large mixing bowl, combine the sour cream, mayonnaise, milk, garlic powder, onion powder, paprika, salt, and pepper. Stir until smooth and well combined.
- Add the cooked potatoes to the bowl with the creamy mixture and gently fold them to coat the potatoes evenly.
- Stir in the shredded cheddar cheese, crumbled bacon (if using), and chopped green onions or chives.
- Transfer the mixture to a greased 9×13-inch baking dish.
- Top with additional shredded cheese, if desired, and bake at 375°F (190°C) for 20-25 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and garnish with fresh parsley, if desired. Serve warm and enjoy!
Notes
- You can make these potatoes ahead of time and refrigerate them until ready to bake. Just add 5-10 extra minutes to the baking time if they are cold from the fridge.
- If you prefer a lighter version, use Greek yogurt instead of sour cream and light mayo.
- Feel free to add other toppings, such as jalapeños for a spicy kick, or sautéed onions for added flavor.
- You can substitute the cheddar cheese with a blend of your favorite cheeses, like Monterey Jack or mozzarella.
