Ingredients

  • 6 medium potatoes, peeled and boiled
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh dill, chopped
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 tbsp vinegar (optional)
  • 1/2 cup mayonnaise (optional for creaminess)

Instructions

  1. Boil the potatoes in salted water until tender, about 15-20 minutes. Drain, let them cool slightly, and then peel and chop into bite-sized cubes.
  2. In a large mixing bowl, add the boiled potatoes, chopped red onion, parsley, and dill.
  3. In a small bowl, whisk together the olive oil, lemon juice, and optional vinegar.
  4. Pour the dressing over the potato mixture. Add salt and pepper to taste. Toss gently to combine.
  5. If desired, stir in mayonnaise for a creamier texture.
  6. Chill the salad in the fridge for at least 30 minutes before serving to allow the flavors to meld together.
  7. Serve cold as a refreshing side dish.
