- 6 medium potatoes, peeled and boiled
- 1/2 red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh dill, chopped
- 2 tbsp olive oil
- 2 tbsp lemon juice
- Salt, to taste
- Freshly ground black pepper, to taste
- 1 tbsp vinegar (optional)
- 1/2 cup mayonnaise (optional for creaminess)
Instructions
- Boil the potatoes in salted water until tender, about 15-20 minutes. Drain, let them cool slightly, and then peel and chop into bite-sized cubes.
- In a large mixing bowl, add the boiled potatoes, chopped red onion, parsley, and dill.
- In a small bowl, whisk together the olive oil, lemon juice, and optional vinegar.
- Pour the dressing over the potato mixture. Add salt and pepper to taste. Toss gently to combine.
- If desired, stir in mayonnaise for a creamier texture.
- Chill the salad in the fridge for at least 30 minutes before serving to allow the flavors to meld together.
- Serve cold as a refreshing side dish.
Notes
- You can add some chopped pickles or olives for extra flavor.
- This salad can be made a day ahead of time for a more developed taste.
- For a vegan version, omit the mayonnaise or use a vegan mayo alternative.
