Description

This easy and creamy corn casserole is a classic recipe by Paula Deen, perfect for holidays, potlucks, or a comforting weeknight dinner. With only a handful of ingredients, it’s a foolproof side dish that’s always a crowd-pleaser!

Ingredients

Scale
  • 1 (15-ounce) can whole kernel corn, drained
  • 1 (15-ounce) can cream-style corn
  • 1 (8-ounce) package Jiffy corn muffin mix
  • 1 cup sour cream
  • ½ cup (1 stick) unsalted butter, melted
  • 1 cup shredded cheddar cheese (optional, for topping)

Instructions

  • Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or a 2-quart casserole dish with butter or non-stick spray.
  • Mix the Ingredients:
In a large mixing bowl, combine the whole kernel corn, cream-style corn, Jiffy corn muffin mix, sour cream, and melted butter. Stir until the mixture is well combined.
  • Assemble the Casserole:
Pour the corn mixture into the prepared baking dish and smooth the top with a spatula to make it even.
  • Optional Cheese Topping:
If you want to add some extra flavor, sprinkle the shredded cheddar cheese evenly over the top of the casserole.
  • Bake the Casserole:
Bake in the preheated oven for 45–55 minutes, or until the top is golden brown and the center is set. If using cheese, you can bake it for the full time or add it in the last 10–15 minutes of baking.
  • Cool and Serve:
Allow the casserole to cool for about 5 minutes before serving. Serve warm and enjoy this creamy, comforting side dish!

Notes

  • You can prepare this casserole ahead of time and store it in the fridge until ready to bake.
  • If you prefer a spicier version, you can add chopped jalapeños or a dash of hot sauce to the mixture.
  • The casserole can be made without the cheese topping, but it adds a nice touch of flavor and a crispy golden crust.
  • If you prefer a healthier version, you can use light sour cream and reduce the butter.
  • For extra crunch, you can add some crushed cornflakes or breadcrumbs on top before baking.
