Description

Ingredients

  • 1/2 teaspoon baking soda

  • 2 1/2 cups granulated sugar
  • 6 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract (optional)
  • 1 cup buttermilk
  • 2 cups diced fresh peaches (peeled)
  • Powdered sugar, for dusting (optional)

Instructions

  1. Preheat the oven to 325°F (163°C). Grease and flour a 10-inch bundt or tube pan.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream the butter and sugar together until light and fluffy, about 3-5 minutes.
  4. Add the eggs one at a time, beating well after each addition. Mix in the vanilla and almond extract.
  5. Alternate adding the flour mixture and buttermilk to the batter, beginning and ending with the flour mixture. Mix until just combined.
  6. Gently fold in the diced peaches.
  7. Pour the batter into the prepared pan and smooth the top.
  8. Bake for 70-80 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the cake cool in the pan for 15 minutes, then invert onto a wire rack to cool completely.
  10. Dust with powdered sugar before serving, if desired.
