Description

These delightful Peach Cheesecake Cake Rolls are a perfect combination of creamy cheesecake filling and fresh peaches, all wrapped in soft crepes. Light, sweet, and utterly delicious, they make a fantastic dessert for any occasion!

Ingredients

Scale
  • For the Cheesecake Filling:
    • 8 oz cream cheese, softened
    • 1/4 cup granulated sugar
    • 1 teaspoon vanilla extract
    • 1 cup heavy cream (whipped to stiff peaks)
  • For the Peaches:
    • 1 cup fresh peaches, diced
    • 2 tablespoons granulated sugar (for macerating the peaches)
  • For the Crust Layer:
    • 1 1/2 cups crushed butter cookies or graham crackers
    • 1/4 cup unsalted butter, melted
  • For the Rolls:
    • 6 large crepes or thin cake layers (store-bought or homemade)
    • Powdered sugar (for dusting)

Instructions

  • Prepare the Peaches: In a bowl, combine the diced peaches with 2 tablespoons of sugar. Set aside for about 10-15 minutes to allow the juices to release.
  • Make the Cheesecake Filling: In a large bowl, beat the softened cream cheese, 1/4 cup of sugar, and vanilla extract until smooth and creamy. Gently fold in the whipped cream until well combined.
  • Make the Crust Layer: In a separate bowl, mix the crushed butter cookies or graham crackers with the melted butter until well coated.
  • Assemble the Rolls: Lay out each crepe (or cake layer) on a flat surface. Spread an even layer of the cheesecake filling over the crepe, then top with some macerated peaches. Sprinkle a small amount of the cookie or cracker mixture on top.
  • Roll Them Up: Carefully roll each crepe into a tight roll, making sure to keep the filling inside. Repeat for all crepes.
  • Chill and Serve: Place the rolls in the fridge to chill for about 30 minutes. Dust with powdered sugar before serving, if desired.

Notes

  • For best results, use ripe peaches for maximum flavor.
  • These rolls can be made a few hours in advance; just chill until ready to serve.
