- 1/4 cup unsalted butter, melted
- For the Rolls:
- 6 large crepes or thin cake layers (store-bought or homemade)
- Powdered sugar (for dusting)
Instructions
- Prepare the Peaches: In a bowl, combine the diced peaches with 2 tablespoons of sugar. Set aside for about 10-15 minutes to allow the juices to release.
- Make the Cheesecake Filling: In a large bowl, beat the softened cream cheese, 1/4 cup of sugar, and vanilla extract until smooth and creamy. Gently fold in the whipped cream until well combined.
- Make the Crust Layer: In a separate bowl, mix the crushed butter cookies or graham crackers with the melted butter until well coated.
- Assemble the Rolls: Lay out each crepe (or cake layer) on a flat surface. Spread an even layer of the cheesecake filling over the crepe, then top with some macerated peaches. Sprinkle a small amount of the cookie or cracker mixture on top.
- Roll Them Up: Carefully roll each crepe into a tight roll, making sure to keep the filling inside. Repeat for all crepes.
- Chill and Serve: Place the rolls in the fridge to chill for about 30 minutes. Dust with powdered sugar before serving, if desired.
