Ingredients
For the Filling:
- 4 cups fresh or frozen peaches, peeled and sliced (about 5–6 peaches)
- 3/4 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 tablespoon cornstarch (optional, for thicker filling)
For the Topping:
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/2 cup unsalted butter, cold and cubed
- 1/2 cup milk (or buttermilk for extra richness)
Instructions
- Preheat the Oven:
- Preheat your oven to 375°F (190°C). Grease a 9×9-inch baking dish or an 8×8-inch square pan.
- Prepare the Peach Filling:
- In a large mixing bowl, combine the sliced peaches, sugar, lemon juice, vanilla extract, and cornstarch (if using). Stir to coat the peaches evenly with the sugar and lemon juice. Let it sit while you prepare the topping.
- Make the Biscuit Topping:
- In another bowl, whisk together the flour, sugar, salt, baking powder, and cinnamon.
- Add the cubed cold butter and use a pastry cutter or your fingers to work the butter into the flour mixture until it resembles coarse crumbs.
- Gradually pour in the milk, stirring until the dough just comes together. Do not overmix.
- Assemble the Cobbler:
- Pour the peach filling into the prepared baking dish, spreading it out evenly.
- Drop spoonfuls of the biscuit topping over the peaches. It doesn’t need to cover the entire surface; some gaps are fine, as the topping will spread as it bakes.
- Bake:
- Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and the filling is bubbling around the edges.
- If the top starts to brown too quickly, cover the cobbler loosely with aluminum foil and continue baking.
- Serve:
- Allow the peach cobbler to cool slightly before serving. Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream for an extra indulgent treat.
Notes
For a more intense peach flavor, you can substitute some of the fresh peaches with canned peaches. If you prefer a sweeter cobbler, you can adjust the sugar to taste. This dessert is best enjoyed the day it’s made, but it can be stored in the fridge for up to 3 days.
