Description

Delicious peach cobbler combined with creamy cheesecake in easy-to-make bars, perfect for dessert or a sweet treat.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 can (15 oz) sliced peaches, drained and chopped
  • 1/2 tsp ground cinnamon
  • 1/4 cup brown sugar
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice

Instructions

  1. Preheat oven to 350ยฐF (175ยฐC). Line a 9ร—9-inch baking pan with parchment paper.
  2. Mix graham cracker crumbs, sugar, and melted butter in a bowl. Press mixture firmly into the bottom of the prepared pan.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla extract. Mix until combined.
  4. Pour cheesecake mixture over the crust and spread evenly.
  5. In a separate bowl, combine chopped peaches, cinnamon, brown sugar, cornstarch, and lemon juice. Stir until peaches are coated.
  6. Drop spoonfuls of the peach mixture evenly over the cheesecake layer. Swirl gently with a knife to marble.
  7. Bake for 40-45 minutes or until the center is set.
  8. Cool completely, then refrigerate for at least 3 hours before cutting into bars.
