- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1/2 cup sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 can (15 oz) sliced peaches, drained and chopped
- 1/2 tsp ground cinnamon
- 1/4 cup brown sugar
- 1 tbsp cornstarch
- 1 tbsp lemon juice
Instructions
- Preheat oven to 350ยฐF (175ยฐC). Line a 9ร9-inch baking pan with parchment paper.
- Mix graham cracker crumbs, sugar, and melted butter in a bowl. Press mixture firmly into the bottom of the prepared pan.
- In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla extract. Mix until combined.
- Pour cheesecake mixture over the crust and spread evenly.
- In a separate bowl, combine chopped peaches, cinnamon, brown sugar, cornstarch, and lemon juice. Stir until peaches are coated.
- Drop spoonfuls of the peach mixture evenly over the cheesecake layer. Swirl gently with a knife to marble.
- Bake for 40-45 minutes or until the center is set.
- Cool completely, then refrigerate for at least 3 hours before cutting into bars.
Notes
- Use fresh peaches when in season for best flavor.
- For a gluten-free version, use gluten-free graham crackers.
- Top with whipped cream or vanilla ice cream when serving.
