Peach Cobbler Donut Hand Pies are portable pastries packed with sweet spiced peaches, wrapped in flaky dough, and coated in a classic donut glaze — perfect for snacking or brunch.

- 2 cups peeled and diced fresh or canned peaches (drained)
- 2 tablespoons brown sugar
- 1 tablespoon cornstarch
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
- 1 teaspoon lemon juice
- 1 package refrigerated pie crusts (2 crusts)
- 1 egg (for egg wash)
- 1 tablespoon water
- Oil for frying (or bake at 375°F)
- For the glaze:
- 1 cup powdered sugar
- 2–3 tablespoons milk
- 1/2 teaspoon vanilla extract
Instructions
- In a saucepan, combine peaches, brown sugar, cornstarch, cinnamon, nutmeg, and lemon juice. Cook over medium heat until thickened and bubbly. Let cool completely.
- Roll out pie crusts and cut into circles or rectangles (about 4 inches wide). Place 1–2 tablespoons of filling in the center of each.
- Top with another piece of dough, seal edges with a fork, and brush with egg wash (1 beaten egg mixed with 1 tablespoon water).
- Heat oil in a deep skillet or fryer to 350°F (175°C). Fry pies for 2–3 minutes per side or until golden. Alternatively, bake at 375°F for 18–22 minutes until golden brown.
- Whisk glaze ingredients until smooth. While pies are still slightly warm, dip tops or drizzle glaze over each pie.
- Allow glaze to set before serving. Enjoy warm or at room temperature.
Notes
- You can use frozen peaches — just thaw and drain first.
- Make them ahead and reheat in the oven for a fresh-baked feel.
- Add a touch of bourbon or vanilla to the filling for extra flavor depth.
