- 3 cups peeled and diced fresh peaches (or canned, drained)
- 1/4 cup brown sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
- 12 egg roll wrappers
- Vegetable oil, for frying
- Optional: powdered sugar or cinnamon sugar for dusting
Instructions
- In a bowl, combine peaches, brown sugar, cinnamon, nutmeg, cornstarch, and lemon juice. Mix well and set aside.
- Lay one egg roll wrapper on a clean surface with a corner facing you (diamond shape).
- Spoon about 2-3 tablespoons of the peach mixture near the corner closest to you.
- Fold the corner over the filling, then fold the left and right corners inward.
- Roll tightly towards the opposite corner, sealing the edge with a little water.
- Repeat with remaining wrappers and filling.
- Heat about 2 inches of vegetable oil in a deep skillet over medium heat.
- Fry egg rolls in batches for 2-3 minutes per side or until golden brown and crispy.
- Drain on paper towels.
- Serve warm, dusted with powdered sugar or cinnamon sugar if desired.
Notes
- Ensure filling is not too wet to avoid soggy wrappers.
- Can bake egg rolls at 425°F (220°C) for 15-20 minutes for a lighter version, flipping halfway.
- Serve with vanilla ice cream for an indulgent dessert.
