Description

Crispy egg rolls stuffed with a warm, spiced peach cobbler filling. A delightful dessert that combines the flavors of classic peach cobbler with a crunchy exterior.


Ingredients

  • 3 cups peeled and diced fresh peaches (or canned, drained)
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 12 egg roll wrappers
  • Vegetable oil, for frying
  • Optional: powdered sugar or cinnamon sugar for dusting

Instructions

  1. In a bowl, combine peaches, brown sugar, cinnamon, nutmeg, cornstarch, and lemon juice. Mix well and set aside.
  2. Lay one egg roll wrapper on a clean surface with a corner facing you (diamond shape).
  3. Spoon about 2-3 tablespoons of the peach mixture near the corner closest to you.
  4. Fold the corner over the filling, then fold the left and right corners inward.
  5. Roll tightly towards the opposite corner, sealing the edge with a little water.
  6. Repeat with remaining wrappers and filling.
  7. Heat about 2 inches of vegetable oil in a deep skillet over medium heat.
  8. Fry egg rolls in batches for 2-3 minutes per side or until golden brown and crispy.
  9. Drain on paper towels.
  10. Serve warm, dusted with powdered sugar or cinnamon sugar if desired.

Notes

  • Ensure filling is not too wet to avoid soggy wrappers.
  • Can bake egg rolls at 425°F (220°C) for 15-20 minutes for a lighter version, flipping halfway.
  • Serve with vanilla ice cream for an indulgent dessert.
