Description
A light, fruity vinaigrette made with ripe peaches, honey, and vinegar. This peach salad dressing adds a fresh, tangy-sweet flavor to green salads, grilled vegetables, or even fruit salads.
Ingredients

- 1 ripe peach, peeled and pitted (or 1/2 cup frozen peach slices, thawed)
- 2 tablespoons olive oil
- 1 tablespoon apple cider vinegar (or white wine vinegar)
- 1 teaspoon honey or maple syrup
- 1/2 teaspoon Dijon mustard
- 1/8 teaspoon salt
- 1โ2 tablespoons water (to thin, if needed)
Instructions
- In a blender or food processor, combine peach, olive oil, vinegar, honey, mustard, and salt.
- Blend until smooth and creamy. Add water a little at a time if needed to reach desired consistency.
- Taste and adjust seasoning โ add more vinegar for tang, or honey for sweetness.
- Use immediately or refrigerate in a sealed jar for up to 5 days.
Notes
- For a spicier version, add a pinch of chili flakes or a dash of hot sauce.
- Pairs well with mixed greens, arugula, goat cheese, pecans, and grilled chicken.
- Frozen peaches work great if fresh are out of season.
