Description

A light, fruity vinaigrette made with ripe peaches, honey, and vinegar. This peach salad dressing adds a fresh, tangy-sweet flavor to green salads, grilled vegetables, or even fruit salads.


Ingredients

  • 1 ripe peach, peeled and pitted (or 1/2 cup frozen peach slices, thawed)
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar (or white wine vinegar)
  • 1 teaspoon honey or maple syrup
  • 1/2 teaspoon Dijon mustard
  • 1/8 teaspoon salt
  • 1โ€“2 tablespoons water (to thin, if needed)

Instructions

  1. In a blender or food processor, combine peach, olive oil, vinegar, honey, mustard, and salt.
  2. Blend until smooth and creamy. Add water a little at a time if needed to reach desired consistency.
  3. Taste and adjust seasoning โ€” add more vinegar for tang, or honey for sweetness.
  4. Use immediately or refrigerate in a sealed jar for up to 5 days.

Notes

  • For a spicier version, add a pinch of chili flakes or a dash of hot sauce.
  • Pairs well with mixed greens, arugula, goat cheese, pecans, and grilled chicken.
  • Frozen peaches work great if fresh are out of season.
