Ingredients

  • 1 cup sugar
  • 1/2 cup white corn syrup (Karo)
  • 1 cup roasted, salted peanuts
  • 1 tsp butter
  • 1 tsp vanilla
  • 1 tsp baking soda

Instructions

  • Combine sugar and corn syrup in a 1-1/2 qt. casserole dish; stir well.
  • Microwave on high for 4 minutes.
  • Stir in the roasted, salted peanuts.
  • Microwave on high for 3-5 minutes, or until the mixture is light brown.
  • Add butter and vanilla, stirring until well mixed.
  • Microwave for an additional 1 to 2 minutes on high.
  • Add baking soda and stir gently until the mixture becomes light and foamy.
  • Pour the mixture onto a lightly greased cookie sheet (or use parchment paper).
  • Let the brittle cool completely before breaking it into small pieces.

Notes

Almond Brittle Variation: Use 7 ounces of dry roasted almonds instead of peanuts, and substitute 1 teaspoon of almond extract for the vanilla.
