- 1/2 cup white corn syrup (Karo)
- 1 cup roasted, salted peanuts
- 1 tsp butter
- 1 tsp vanilla
- 1 tsp baking soda
Instructions
- Combine sugar and corn syrup in a 1-1/2 qt. casserole dish; stir well.
- Microwave on high for 4 minutes.
- Stir in the roasted, salted peanuts.
- Microwave on high for 3-5 minutes, or until the mixture is light brown.
- Add butter and vanilla, stirring until well mixed.
- Microwave for an additional 1 to 2 minutes on high.
- Add baking soda and stir gently until the mixture becomes light and foamy.
- Pour the mixture onto a lightly greased cookie sheet (or use parchment paper).
- Let the brittle cool completely before breaking it into small pieces.
Notes
Almond Brittle Variation: Use 7 ounces of dry roasted almonds instead of peanuts, and substitute 1 teaspoon of almond extract for the vanilla.
