Description

Peanut Brittle is a crunchy, sweet treat that’s packed with roasted peanuts and coated in a delicious caramelized sugar syrup. Perfect for gifting or enjoying as a snack with its addictive crunch and flavor!


Ingredients

  • 1½ cups granulated sugar
  • ½ cup light corn syrup
  • 1 teaspoon vanilla extract
  • 1 tablespoon unsalted butter
  • ¼ teaspoon baking soda
  • 1¼ cups roasted unsalted peanuts
  • ¼ teaspoon salt

Instructions

  1. Line a baking sheet with parchment paper or a silicone baking mat and set aside.
  2. In a medium saucepan, combine sugar, corn syrup, and salt over medium heat. Stir constantly until the sugar has dissolved.
  3. Once the sugar has dissolved, stop stirring and let the mixture boil until it reaches 300°F (150°C) on a candy thermometer. This is known as the hard crack stage.
  4. Once the syrup reaches 300°F, remove from heat. Immediately stir in the butter, vanilla extract, and baking soda. The mixture will bubble up, so be careful!
  5. Quickly fold in the peanuts, ensuring they are evenly coated with the syrup.
  6. Pour the hot mixture onto the prepared baking sheet and spread it out into an even layer. Let it cool for about 30 minutes or until completely hardened.
  7. Once the brittle is cooled and firm, break it into pieces. Store in an airtight container at room temperature for up to two weeks.
