Optional Garnishes:

Instructions
- Prepare the Cake Batter:
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or line it with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, cream together the softened butter, peanut butter, granulated sugar, and brown sugar until light and fluffy (about 3-4 minutes).
- Beat in the eggs, one at a time, and then add the vanilla extract. Mix well.
- Stir in the mashed bananas until fully incorporated.
- Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, starting and ending with the dry ingredients. Mix until just combined.
- Bake the Cake:
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool completely in the pan before frosting.
- Make the Peanut Butter Frosting:
- In a large bowl, beat together the butter and peanut butter until smooth and creamy.
- Gradually add the powdered sugar, one cup at a time, mixing well after each addition.
- Add the heavy cream and vanilla extract, beating until the frosting is light and fluffy. Adjust the consistency with more cream if needed.
- Assemble the Cake:
- Spread the peanut butter frosting evenly over the cooled cake.
- Garnish with sliced bananas, crushed peanuts, or a drizzle of melted chocolate or peanut butter if desired.
Notes
- For best results, use ripe bananas, as they add more natural sweetness to the cake.
- Let the cake cool completely before frosting to prevent the frosting from melting.
- If the frosting is too thick, add a little more cream or milk to adjust the consistency.
- You can use a 9-inch round cake pan if you prefer a layered cake.
- For an extra peanut butter flavor, sprinkle crushed peanuts on top of the frosting.
