1/2 cup butter (softened)
-
1/2 cup granulated sugar
-
1/4 cup packed brown sugar
-
1 large egg
-
1 tsp vanilla extract
-
1 cup all-purpose flour
-
1/2 tsp baking soda
-
1/4 tsp salt
-
1/2 cup chocolate chips (optional)
Instructions
-
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
-
In a large bowl, combine brownie mix, peanut butter, softened butter, granulated sugar, and brown sugar. Mix until well combined.
-
Add the egg and vanilla extract, then stir in the flour, baking soda, and salt until a dough forms.
-
Drop rounded spoonfuls of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
-
If using chocolate chips, gently fold them into the dough.
-
Bake for 8-10 minutes, or until the edges are set and the tops are slightly cracked.
-
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
-
For extra flavor, drizzle some melted peanut butter or chocolate on top of the cookies after baking.
-
Store in an airtight container for up to 3 days for maximum freshness.
-
You can add a pinch of sea salt on top before baking for a salty-sweet contrast.
