Description

Soft and chewy cookies stuffed with mini peanut butter cups for a decadent treat that’s a chocolate and peanut butter lover’s dream.


Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup semi-sweet chocolate chips
  • 12 mini peanut butter cups (unwrapped)

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Cream together butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add egg and vanilla extract; beat until combined.
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Fold in the chocolate chips.
  7. Scoop 1.5 tablespoons of dough, flatten slightly, and place a mini peanut butter cup in the center. Top with another tablespoon of dough and seal the edges around the candy.
  8. Place stuffed dough balls on the prepared baking sheet, spacing about 2 inches apart.
  9. Bake for 10–12 minutes or until the edges are golden and centers are just set.
  10. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

  • Chill dough for 15–30 minutes if it’s too soft to work with.
  • For extra peanut butter flavor, use peanut butter chips in addition to or instead of chocolate chips.
  • Cookies can be frozen before or after baking.
