Description

These Peanut Butter Frozen Yogurt Bars are the perfect cool and creamy treat for a hot day! Made with peanut butter and Greek yogurt, these bars are both indulgent and healthier than traditional ice cream. They’re easy to make, freezer-friendly, and a delightful combination of sweetness and creaminess. A perfect snack for the whole family!

Ingredients

Scale
  • 1 cup natural peanut butter (smooth or crunchy)
  • 1 cup Greek yogurt (full-fat or low-fat)
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/4 cup mini chocolate chips (optional, for topping)

Instructions

  1. Prepare the Pan:
Line an 8×8-inch baking dish with parchment paper, leaving an overhang for easy removal.

  2. Mix the Base:
In a medium bowl, combine the peanut butter, Greek yogurt, honey (or maple syrup), and vanilla extract. Stir until well combined and smooth.

  3. Pour and Spread:
Pour the mixture into the prepared baking dish and spread it out evenly with a spatula.

  4. Add Toppings:
If you’re using chocolate chips, sprinkle them evenly over the top of the peanut butter yogurt mixture.

  5. Freeze:
Place the dish in the freezer and freeze for at least 4 hours, or until firm.

  6. Slice and Serve:
Once frozen, remove the dish from the freezer and lift the bars out using the parchment paper overhang. Cut the bars into squares or rectangles.

  7. Store:
Store the leftover bars in an airtight container in the freezer for up to 1-2 weeks.

Notes

  • For added texture, you can mix in some crushed nuts, granola, or even a swirl of jam.
  • If you want a firmer texture, you can add a tablespoon of cornstarch to the mixture before freezing.
  • You can also substitute almond butter or cashew butter for the peanut butter if desired.
  • If you prefer a sweeter treat, increase the amount of honey or maple syrup to taste.
