Ingredients
Scale
- 1 cup Greek yogurt (plain, full-fat or low-fat)
- ¼ cup natural peanut butter (creamy or chunky)
- 1 tbsp honey or maple syrup
- 1 tsp vanilla extract
- ½ cup rolled oats
- ¼ cup mini chocolate chips (optional)
- 2 tbsp chia seeds or flaxseeds (optional)
Instructions
- Mix the ingredients: In a medium bowl, combine the Greek yogurt, peanut butter, honey (or maple syrup), and vanilla extract. Stir until smooth and fully incorporated.
- Add the dry ingredients: Stir in the rolled oats, and if desired, mix in the mini chocolate chips and chia or flaxseeds for added texture and nutrition.
- Shape the bites: Use a spoon or cookie scoop to form bite-sized portions of the mixture and roll them into small balls.
- Chill: Place the yogurt bites onto a parchment-lined baking sheet or tray. Refrigerate for at least 1 hour to set.
- Serve: Enjoy immediately after chilling or store in an airtight container in the fridge for up to 1 week.
Notes
- Feel free to adjust the sweetness by adding more honey or maple syrup if desired.
- You can swap peanut butter with almond butter or cashew butter for a different flavor.
- To make these bites extra decadent, you can dip them halfway in melted dark chocolate and refrigerate until the chocolate hardens.
