- 2 large eggs
- 1 tsp vanilla extract
- 1 1/2 cups rolled oats
- 1 1/2 cups all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/2 cups semisweet chocolate chips
- Optional: 1/2 cup chopped peanuts for extra crunch
Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
- In a large mixing bowl, beat together the softened butter, peanut butter, brown sugar, and granulated sugar until smooth and creamy.
- Add eggs, one at a time, beating well after each addition. Stir in vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until combined.
- Stir in the rolled oats and chocolate chips (and chopped peanuts, if using).
- Drop rounded tablespoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are golden and the centers are set.
- Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- For chewier cookies, do not over-bake. Take them out while the centers are still slightly soft.
- If you prefer a more crunchy texture, bake for an extra minute or two.
- You can use any nut butter in place of peanut butter if you have allergies or preferences (almond, cashew, etc.).
- For extra chocolatey goodness, sprinkle a few chocolate chips on top before baking.
