  • 1/2 cup peanut butter (creamy or chunky)
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups rolled oats
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cups semisweet chocolate chips
  • Optional: 1/2 cup chopped peanuts for extra crunch

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a large mixing bowl, beat together the softened butter, peanut butter, brown sugar, and granulated sugar until smooth and creamy.
  3. Add eggs, one at a time, beating well after each addition. Stir in vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until combined.
  6. Stir in the rolled oats and chocolate chips (and chopped peanuts, if using).
  7. Drop rounded tablespoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are golden and the centers are set.
  9. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For chewier cookies, do not over-bake. Take them out while the centers are still slightly soft.
  • If you prefer a more crunchy texture, bake for an extra minute or two.
  • You can use any nut butter in place of peanut butter if you have allergies or preferences (almond, cashew, etc.).
  • For extra chocolatey goodness, sprinkle a few chocolate chips on top before baking.
