Instructions
- Preheat the oven to 325°F (163°C). Grease and flour a 10-inch bundt pan or tube pan.
- In a large mixing bowl, cream together the softened butter, peanut butter, and sugar using a hand mixer or stand mixer until light and fluffy (about 4-5 minutes).
- Add the eggs, one at a time, beating well after each addition.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
- Stir in the vanilla extract.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 1 hour to 1 hour 15 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Let the cake cool in the pan for 10-15 minutes, then remove it from the pan and transfer it to a wire rack to cool completely.
- Once cooled, slice and serve. Optional: drizzle with chocolate ganache or serve with whipped cream.
