- For the Peanut Butter Filling:
- 1 cup creamy peanut butter
- 2 tablespoons butter, softened
- 1 teaspoon vanilla extract
- 1 ½ cups powdered sugar
- 1 cup graham cracker crumbs
- For the Coating:
- 8 ounces white chocolate bark or white chocolate chips
- Holiday sprinkles (optional)
Instructions
- In a large mixing bowl, combine the peanut butter, softened butter, and vanilla extract until well blended (a stand mixer can be used if preferred).
- Add the powdered sugar and graham cracker crumbs, stirring until thoroughly mixed.
- Line a baking sheet with parchment paper. Scoop out 1 tablespoon of the mixture and roll it into a smooth ball. Repeat for the remaining mixture.
- Place the balls on the prepared baking sheet and refrigerate for 30 minutes to chill.
- In a microwave-safe bowl, melt the white chocolate bark by heating it for 30 seconds at a time, stirring in between, until fully melted.
- Dip each chilled peanut butter ball into the melted white chocolate using a fork or toothpick. Allow excess chocolate to drip off by tapping the side of the bowl.
- Place the coated balls back on the baking sheet.
- To decorate, transfer any remaining melted chocolate into a plastic baggie or piping bag, cut off a corner, and drizzle over the truffles. Top with festive sprinkles if desired.
- Refrigerate for at least 15 minutes to allow the chocolate to set.
