Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  3. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  4. In a small bowl, combine the peanut butter, powdered sugar, vanilla extract, and milk. Mix until smooth and well combined to create the peanut butter filling.
  5. To assemble the cookies, take a small amount of cookie dough (about 1 tablespoon) and flatten it slightly in the palm of your hand. Place a small teaspoon of the peanut butter filling in the center, then cover the filling with another small piece of cookie dough. Roll the dough into a ball and place it on the prepared baking sheet. Repeat with the remaining dough and peanut butter filling.
  6. Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The center may still look soft, but it will firm up as the cookies cool.
