Description
Pecan Pie is a classic dessert, especially popular during the holidays. It features a rich, sweet filling made with corn syrup, brown sugar, and butter, combined with crunchy pecans in a buttery, flaky crust. This pie is perfect for festive occasions or as a special treat.
Ingredients
Scale
For the Crust:
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, chilled and cut into small cubes
- 2–3 tablespoons ice water
For the Filling:
- 1 cup light corn syrup
- 1 cup packed brown sugar
- 1/2 cup unsalted butter, melted
- 3 large eggs, lightly beaten
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 2 cups pecan halves
Instructions
- Prepare the Crust:
- In a large bowl, whisk together the flour and salt.
- Cut in the chilled butter until the mixture resembles coarse crumbs.
- Add ice water, one tablespoon at a time, mixing until the dough comes together. Avoid overmixing.
- Form the dough into a ball, flatten into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- Preheat the Oven:
- Preheat your oven to 350°F (175°C).
- Roll Out the Dough:
- Roll out the dough on a floured surface to fit a 9-inch pie dish. Transfer to the dish, pressing into the edges and trimming excess dough.
- Crimp edges if desired and refrigerate the crust while preparing the filling.
- Make the Filling:
- Whisk together the corn syrup, brown sugar, melted butter, eggs, vanilla extract, and salt until smooth.
- Assemble the Pie:
- Arrange pecan halves in the chilled pie crust.
- Pour the filling over the pecans, ensuring even distribution.
- Bake the Pie:
- Bake for 50-60 minutes, or until the filling is set and the center slightly jiggles when gently shaken.
- Cover edges with foil halfway through if the crust starts to brown too much.
- Cool and Serve:
- Allow the pie to cool completely before slicing. Serve with whipped cream or vanilla ice cream.
Notes
- Ensure the pie is fully cooled before slicing to allow the filling to set properly.
- If using dark corn syrup, the pie will have a richer flavor.
- For added flavor, consider incorporating a splash of bourbon or a pinch of cinnamon into the filling.
