Description

Mini versions of your favorite pecan pie, these bite-sized treats are perfect for parties or whenever you want a little taste of the South!


Ingredients

Scale
  • 1 refrigerated pie crust (or homemade)
  • 1 cup chopped pecans
  • 1/2 cup brown sugar
  • 1/3 cup corn syrup
  • 1 egg, beaten
  • 1 tbsp melted butter
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  • Preheat the oven to 350°F (175°C). Grease a mini muffin pan.
  • Roll out the pie crust and cut into small circles using a cookie cutter. Press each circle into the mini muffin pan to form small crusts.
  • In a bowl, mix together the chopped pecans, brown sugar, corn syrup, beaten egg, melted butter, vanilla extract, and a pinch of salt.
  • Spoon the pecan mixture evenly into each crust.
  • Bake for 20-25 minutes until golden and set.
  • Cool in the pan before removing and serving.

Notes

  • For a more decadent treat, add a few chocolate chips to the filling.
  • These bites can be made ahead of time and stored in an airtight container for up to 3 days.
