Mini versions of your favorite pecan pie, these bite-sized treats are perfect for parties or whenever you want a little taste of the South!

- 1 refrigerated pie crust (or homemade)
- 1 cup chopped pecans
- 1/2 cup brown sugar
- 1/3 cup corn syrup
- 1 egg, beaten
- 1 tbsp melted butter
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Preheat the oven to 350°F (175°C). Grease a mini muffin pan.
- Roll out the pie crust and cut into small circles using a cookie cutter. Press each circle into the mini muffin pan to form small crusts.
- In a bowl, mix together the chopped pecans, brown sugar, corn syrup, beaten egg, melted butter, vanilla extract, and a pinch of salt.
- Spoon the pecan mixture evenly into each crust.
- Bake for 20-25 minutes until golden and set.
- Cool in the pan before removing and serving.
Notes
- For a more decadent treat, add a few chocolate chips to the filling.
- These bites can be made ahead of time and stored in an airtight container for up to 3 days.
