  • 1/4 cup beef broth
  • 2 tbsp Worcestershire sauce
  • 1 tbsp cornstarch (optional, for thickening)
  • 1 tbsp olive oil (for browning, optional)
  • 1 tsp ginger (fresh or ground)
  • 1/2 tsp black pepper
  • 1/2 tsp red pepper flakes (optional, for heat)
  • Cooked rice, for serving

Instructions

  1. Prepare the Ingredients:
    Thinly slice the flank steak or sirloin into strips. Slice the onions and bell peppers, and mince the garlic.
  2. Brown the Steak (Optional):
    For extra flavor, heat a little olive oil in a large skillet over medium-high heat. Brown the steak strips for 2-3 minutes until seared. Transfer the browned steak to the Crock Pot. This step is optional but adds depth to the flavor.
  3. Add the Vegetables:
    Place the sliced onions, bell peppers, and minced garlic into the Crock Pot along with the steak.
  4. Prepare the Sauce:
    In a small bowl, whisk together the soy sauce, beef broth, Worcestershire sauce, ginger, black pepper, and red pepper flakes (if using). Pour the sauce mixture over the steak and vegetables in the Crock Pot.
  5. Cook in the Crock Pot:
    Cover the Crock Pot and cook on low for 6-7 hours or high for 3-4 hours, until the steak is tender and the vegetables are soft.
  6. Thicken the Sauce (Optional):
    If you prefer a thicker sauce, mix 1 tablespoon of cornstarch with 1 tablespoon of cold water to make a slurry. Add the slurry to the Crock Pot about 30 minutes before serving, stirring to combine. Let it cook for the remaining time to thicken the sauce.
  7. Serve:
    Once cooked, serve the pepper steak over steamed rice or noodles. Garnish with chopped green onions or fresh herbs, if desired.

Notes

  • For added flavor, you can marinate the steak in the soy sauce mixture for a few hours before cooking.
  • If you don’t have flank steak, sirloin or skirt steak works well for this recipe.
