Description
These rich and fudgy brownies are topped with a layer of creamy white chocolate and crushed peppermint bark for a perfect holiday treat. A combination of chocolatey goodness and minty freshness!

For the Brownies:
- 1 cup unsalted butter, melted
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 4 large eggs
- 1 ½ tsp vanilla extract
- 1 cup all-purpose flour
- ½ cup unsweetened cocoa powder
- ½ tsp baking powder
- ¼ tsp salt
- 1 cup semi-sweet chocolate chips
For the Peppermint Bark Topping:
- 8 oz white chocolate, chopped
- ½ tsp peppermint extract
- ½ cup crushed peppermint bark or candy canes (for topping)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper.
- In a large mixing bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth.
- Beat in the eggs, one at a time, and stir in the vanilla extract.
- In another bowl, sift together the flour, cocoa powder, baking powder, and salt. Gradually add the dry ingredients into the wet ingredients and mix until just combined.
- Stir in the chocolate chips.
- Pour the brownie batter into the prepared pan and spread it out evenly. Bake for 25-30 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.
- While the brownies are baking, prepare the peppermint bark topping: In a microwave-safe bowl, melt the white chocolate in 30-second intervals, stirring until smooth. Stir in the peppermint extract once melted.
- Once the brownies are done, remove them from the oven and let them cool for 10 minutes.
- Pour the melted white chocolate over the slightly cooled brownies and spread it out evenly with a spatula.
- Sprinkle the crushed peppermint bark or candy canes over the white chocolate layer.
- Refrigerate the brownies for 30 minutes to allow the white chocolate to set.
- Once set, cut the brownies into squares and serve.
Notes
- For an extra touch, drizzle some melted dark or milk chocolate over the top before adding the crushed peppermint.
- If you can’t find peppermint bark, crushed candy canes are a great alternative!
- Let the brownies cool completely before cutting to ensure clean slices.
