Description

These rich and fudgy brownies are topped with a layer of creamy white chocolate and crushed peppermint bark for a perfect holiday treat. A combination of chocolatey goodness and minty freshness!

Ingredients

Scale

For the Brownies:

  • 1 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 4 large eggs
  • 1 ½ tsp vanilla extract
  • 1 cup all-purpose flour
  • ½ cup unsweetened cocoa powder
  • ½ tsp baking powder
  • ¼ tsp salt
  • 1 cup semi-sweet chocolate chips

For the Peppermint Bark Topping:

  • 8 oz white chocolate, chopped
  • ½ tsp peppermint extract
  • ½ cup crushed peppermint bark or candy canes (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper.
  2. In a large mixing bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth.
  3. Beat in the eggs, one at a time, and stir in the vanilla extract.
  4. In another bowl, sift together the flour, cocoa powder, baking powder, and salt. Gradually add the dry ingredients into the wet ingredients and mix until just combined.
  5. Stir in the chocolate chips.
  6. Pour the brownie batter into the prepared pan and spread it out evenly. Bake for 25-30 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.
  7. While the brownies are baking, prepare the peppermint bark topping: In a microwave-safe bowl, melt the white chocolate in 30-second intervals, stirring until smooth. Stir in the peppermint extract once melted.
  8. Once the brownies are done, remove them from the oven and let them cool for 10 minutes.
  9. Pour the melted white chocolate over the slightly cooled brownies and spread it out evenly with a spatula.
  10. Sprinkle the crushed peppermint bark or candy canes over the white chocolate layer.
  11. Refrigerate the brownies for 30 minutes to allow the white chocolate to set.
  12. Once set, cut the brownies into squares and serve.

Notes

  • For an extra touch, drizzle some melted dark or milk chocolate over the top before adding the crushed peppermint.
  • If you can’t find peppermint bark, crushed candy canes are a great alternative!
  • Let the brownies cool completely before cutting to ensure clean slices.
