Ingredients

  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 ½ tsp vanilla extract
  • 1 tsp peppermint extract
  • 3 cups all-purpose flour

  • ¼ tsp salt
  • 1 ½ cups semi-sweet chocolate chips
  • ½ cup mini chocolate chips (optional, for extra chocolatey goodness)
  • 1/2 cup crushed peppermint candies or candy canes (plus extra for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. This will take about 2-3 minutes.
  3. Beat in the eggs one at a time, then add the vanilla and peppermint extracts, mixing until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Stir in the semi-sweet chocolate chips, mini chocolate chips (if using), and crushed peppermint candies.
  6. Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, spacing about 2 inches apart.
  7. Gently flatten each cookie dough ball with the back of a spoon or your fingers.
  8. Bake for 10-12 minutes, or until the edges are golden brown but the centers are still soft.
  9. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
  10. Optionally, sprinkle with extra crushed peppermint on top for a festive touch!
