Description

Ingredients

  • 8 slices of bread (sourdough or Italian preferred)
  • 2 cups shredded mozzarella cheese (or sliced)
  • 1/2 cup mini pepperoni (or regular, sliced)
  • 1/2 cup marinara or pizza sauce (plus more for dipping)
  • 1/2 teaspoon Italian seasoning
  • 2 tablespoons butter, softened
  • Optional: grated Parmesan, red pepper flakes, fresh basil

Instructions

  1. Preheat a skillet or griddle over medium heat.
  2. Spread butter on one side of each slice of bread. On the unbuttered side of 4 slices, spread a spoonful of marinara sauce.
  3. Top with shredded mozzarella, a few slices of pepperoni, and a sprinkle of Italian seasoning. Add optional toppings if desired.
  4. Top each with a second slice of bread, buttered side out.
  5. Place sandwiches in the skillet and cook for 3–4 minutes per side, or until golden brown and cheese is melted.
  6. Remove from skillet, let cool slightly, and cut in half. Serve with warm marinara on the side for dipping.
