- 8 slices of bread (sourdough or Italian preferred)
- 2 cups shredded mozzarella cheese (or sliced)
- 1/2 cup mini pepperoni (or regular, sliced)
- 1/2 cup marinara or pizza sauce (plus more for dipping)
- 1/2 teaspoon Italian seasoning
- 2 tablespoons butter, softened
- Optional: grated Parmesan, red pepper flakes, fresh basil
Instructions
- Preheat a skillet or griddle over medium heat.
- Spread butter on one side of each slice of bread. On the unbuttered side of 4 slices, spread a spoonful of marinara sauce.
- Top with shredded mozzarella, a few slices of pepperoni, and a sprinkle of Italian seasoning. Add optional toppings if desired.
- Top each with a second slice of bread, buttered side out.
- Place sandwiches in the skillet and cook for 3–4 minutes per side, or until golden brown and cheese is melted.
- Remove from skillet, let cool slightly, and cut in half. Serve with warm marinara on the side for dipping.
