For the Crust:

  • 1 medium cauliflower, chopped into small florets
  • 2 cups fresh spinach, chopped
  • 1 tbsp olive oil
  • ½ onion, diced
  • 3 large eggs
  • 1 cup heavy cream or milk (dairy or non-dairy)
  • 1 cup shredded cheese (cheddar, mozzarella, or a mix)
  • 1 tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp ground nutmeg (optional)
  • ¼ cup grated Parmesan cheese (optional, for extra flavor)

Instructions

  1. Preheat your oven to 375°F (190°C). Place the pie crust in a 9-inch tart or pie pan and set aside.
  2. In a medium saucepan, bring water to a boil and blanch the cauliflower florets for 2-3 minutes, until just tender. Drain and set aside.
  3. Heat the olive oil in a large skillet over medium heat. Add the diced onion and sauté for 4-5 minutes, until softened.
  4. Add the spinach and cook for an additional 2 minutes, just until wilted. Remove from heat and set aside.
  5. In a large mixing bowl, whisk together the eggs, heavy cream (or milk), garlic powder, salt, pepper, and nutmeg (if using).
  6. Stir in the sautéed spinach and onions, cooked cauliflower, and shredded cheese into the egg mixture. Mix until evenly combined.
  7. Pour the filling mixture into the prepared pie crust. Sprinkle the top with Parmesan cheese if using.
  8. Bake for 35-40 minutes, or until the quiche is set in the center and lightly golden on top.
  9. Let the quiche cool for a few minutes before slicing and serving.

Notes

  • For a lighter version, you can substitute half of the cream with low-fat milk or use a dairy-free alternative.
