For the Crust:

For the Filling:
- 1 medium cauliflower, chopped into small florets
- 2 cups fresh spinach, chopped
- 1 tbsp olive oil
- ½ onion, diced
- 3 large eggs
- 1 cup heavy cream or milk (dairy or non-dairy)
- 1 cup shredded cheese (cheddar, mozzarella, or a mix)
- 1 tsp garlic powder
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp ground nutmeg (optional)
- ¼ cup grated Parmesan cheese (optional, for extra flavor)
Instructions
- Preheat your oven to 375°F (190°C). Place the pie crust in a 9-inch tart or pie pan and set aside.
- In a medium saucepan, bring water to a boil and blanch the cauliflower florets for 2-3 minutes, until just tender. Drain and set aside.
- Heat the olive oil in a large skillet over medium heat. Add the diced onion and sauté for 4-5 minutes, until softened.
- Add the spinach and cook for an additional 2 minutes, just until wilted. Remove from heat and set aside.
- In a large mixing bowl, whisk together the eggs, heavy cream (or milk), garlic powder, salt, pepper, and nutmeg (if using).
- Stir in the sautéed spinach and onions, cooked cauliflower, and shredded cheese into the egg mixture. Mix until evenly combined.
- Pour the filling mixture into the prepared pie crust. Sprinkle the top with Parmesan cheese if using.
- Bake for 35-40 minutes, or until the quiche is set in the center and lightly golden on top.
- Let the quiche cool for a few minutes before slicing and serving.
