- 8 chicken drumsticks
- 1/4 cup olive oil
- 2 tablespoons Peri Peri sauce (store-bought or homemade)
- 2 cloves garlic, minced
- 1 tablespoon lemon juice

- 1 teaspoon ground coriander
- 1/2 teaspoon chili powder (adjust to taste)
- Salt and black pepper, to taste
- Fresh cilantro or parsley, for garnish (optional)
Instructions
- In a bowl, combine olive oil, Peri Peri sauce, garlic, lemon juice, paprika, cumin, coriander, chili powder, salt, and pepper. Whisk until well combined.
- Place the chicken drumsticks in a large resealable bag or shallow dish. Pour the marinade over the chicken and toss to coat. Seal the bag or cover the dish and refrigerate for at least 1 hour, or preferably overnight for maximum flavor.
- Preheat your oven to 400°F (200°C) or heat a grill to medium-high heat.
- If baking, place the marinated drumsticks on a baking sheet lined with parchment paper. Roast in the preheated oven for 35-40 minutes, or until the chicken is golden and cooked through, flipping halfway through for even cooking.
- If grilling, cook the marinated drumsticks on the grill for 25-30 minutes, turning occasionally, until the chicken reaches an internal temperature of 165°F (74°C) and is cooked through.
- Once cooked, remove the drumsticks from the oven or grill and let them rest for a few minutes.
- Garnish with fresh cilantro or parsley and serve with your favorite side dish, such as rice, roasted vegetables, or a simple salad.
Notes
- For a milder version, reduce the amount of chili powder and Peri Peri sauce in the marinade.
- If you don’t have Peri Peri sauce, you can make your own by blending red chili peppers, garlic, lemon juice, olive oil, and a little vinegar.
- Serve with a cooling side like tzatziki, yogurt, or a cucumber salad to balance out the heat.
- Leftover drumsticks can be stored in the fridge for up to 3 days or frozen for up to 3 months.
