Description

Deliciously fresh and satisfying, these Pesto Chicken and Avocado Salad Wraps combine grilled chicken, creamy avocado, and a zesty Caesar dressing, all wrapped up in a soft tortilla. Perfect for a quick lunch or a light dinner, these wraps are both healthy and flavorful!

Caesar Dressing:

  • 1/2 cup mayonnaise
  • 3 tablespoons extra virgin olive oil
  • 3 tablespoons lemon juice
  • 2 teaspoons Dijon mustard
  • 2 teaspoons Worcestershire sauce
  • 12 cloves garlic, grated
  • Kosher salt and black pepper, to taste
  • 1/3 cup grated Parmesan

Wraps:

  • 4 large tortillas (gluten-free tortillas optional)
  • 4 cups shredded lettuce
  • 1 avocado, diced
  • 1/4 cup fresh basil, torn
  • 1/2 cup basil pesto
  • 1 to 1 1/2 cups grilled chicken, cubed or shredded
  • 1/2 cup crumbled blue cheese or shredded cheddar

Instructions

  • Make Dressing: In a bowl or glass jar, combine mayonnaise, olive oil, lemon juice, Dijon mustard, Worcestershire sauce, grated garlic, salt, pepper, and Parmesan. Taste and adjust seasoning as needed.
  • Prepare Wraps: In a large salad bowl, mix together shredded lettuce, diced avocado, and torn basil. Toss with half of the Caesar dressing.
  • Assemble Wraps: Microwave one tortilla for 20 seconds to soften. Spread a layer of basil pesto on the tortilla, then add the salad mixture, cubed or shredded chicken, and cheese. Drizzle with more dressing. Fold the tortilla over the filling, fold in the sides, and roll it up tightly. Repeat with remaining ingredients.
  • Serve: Serve wraps at room temperature or warm them in a skillet with a drizzle of olive oil. Enjoy with extra dressing and pesto.

Notes

  • For extra flavor, consider adding sliced cherry tomatoes or cucumbers to the filling.
