Ingredients
For the Flatbread:
- 2 flatbreads (store-bought or homemade)
- 1 tablespoon olive oil (for brushing)
- Salt, to taste
For the Pesto Chicken:
- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- Salt and pepper, to taste
- 2 tablespoons pesto sauce (store-bought or homemade)
For the Topping:
- 1 cup fresh mozzarella, sliced
- 1/4 cup freshly grated Parmesan cheese
- 1/4 cup fresh basil leaves, chopped (optional for garnish)
- 1 tablespoon balsamic glaze (optional, for drizzling)
Instructions

Prepare the chicken:
Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Season the chicken breasts with salt and pepper on both sides.
Cook the chicken for about 6-7 minutes per side, or until the chicken is fully cooked and golden brown on the outside.
Remove the chicken from the pan, let it rest for a few minutes, and then slice it thinly. -
Preheat the oven:
Preheat your oven to 400°F (200°C). -
Prepare the flatbread:
Place the flatbreads on a baking sheet. Brush the top of each flatbread lightly with olive oil and sprinkle with a pinch of salt.
Place the flatbreads in the oven for about 5 minutes to warm them up and get them slightly crispy. -
Assemble the flatbread:
Once the flatbreads are crispy and lightly golden, remove them from the oven.
Spread a thin layer of pesto sauce evenly over each flatbread.
Arrange the sliced chicken evenly over the pesto. Top with fresh mozzarella slices and a sprinkle of Parmesan cheese. -
Bake the flatbreads:
Return the flatbreads to the oven and bake for 8-10 minutes, or until the cheese has melted and the flatbread is crispy on the edges. -
Finish and serve:
Remove from the oven and sprinkle with fresh basil leaves and a drizzle of balsamic glaze if desired.
Slice into pieces and serve immediately.
