Description

Deliciously simple Pesto & Mozzarella Tartines featuring toasted rustic bread topped with creamy mozzarella, fresh tomatoes, and aromatic basil pesto. Perfect as an appetizer or light meal!


Ingredients

  • 4 slices rustic bread (like sourdough or ciabatta)
  • ½ cup basil pesto (store-bought or homemade)
  • 2 large ripe tomatoes (sliced)
  • 8 oz (225g) fresh mozzarella (sliced)
  • Fresh basil leaves (for garnish)
  • Olive oil (for drizzling)
  • Salt and black pepper (to taste)

Instructions

  • Prep the Bread:
    • Preheat a grill pan or your oven’s broiler.
    • Lightly brush both sides of the bread slices with olive oil.
    • Grill or broil the bread until golden and crispy, about 2-3 minutes per side.
  • Assemble the Tartines:
    • Spread a generous layer of basil pesto over each slice of grilled bread.
    • Place tomato slices on top of the pesto.
    • Add slices of fresh mozzarella on top of the tomatoes.
  • Season and Finish:
    • Drizzle a little olive oil over the mozzarella.
    • Season with salt and freshly ground black pepper.
    • Garnish each tartine with fresh basil leaves.
