- 4 slices rustic bread (like sourdough or ciabatta)
- ½ cup basil pesto (store-bought or homemade)
- 2 large ripe tomatoes (sliced)
- 8 oz (225g) fresh mozzarella (sliced)
- Fresh basil leaves (for garnish)
- Olive oil (for drizzling)
- Salt and black pepper (to taste)
Instructions
- Prep the Bread:
- Preheat a grill pan or your oven’s broiler.
- Lightly brush both sides of the bread slices with olive oil.
- Grill or broil the bread until golden and crispy, about 2-3 minutes per side.
- Assemble the Tartines:
- Spread a generous layer of basil pesto over each slice of grilled bread.
- Place tomato slices on top of the pesto.
- Add slices of fresh mozzarella on top of the tomatoes.
- Season and Finish:
- Drizzle a little olive oil over the mozzarella.
- Season with salt and freshly ground black pepper.
- Garnish each tartine with fresh basil leaves.
- Serve:
