  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream

Instructions

  • Preheat Oven: Preheat your oven to 325°F (163°C). Line a 9×13-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  • Make the Crust: In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture evenly into the bottom of the prepared pan to form the crust.
  • Bake the Crust: Bake the crust for 8-10 minutes until lightly golden. Remove from the oven and let it cool while you prepare the filling.
  • Prepare the Cheesecake Filling: In a large bowl, beat the softened cream cheese and sugar with an electric mixer until smooth and creamy. Add eggs, one at a time, mixing well after each addition. Stir in vanilla extract and sour cream until fully incorporated.
  • Assemble and Bake: Pour the cheesecake filling over the cooled crust, spreading it out evenly. Bake for 30-35 minutes, or until the center is set and no longer jiggles.
  • Cool and Chill: Remove from the oven and let the bars cool completely in the pan. Once cool, refrigerate for at least 2 hours, or until firm.
  • Cut and Serve: Lift the cheesecake bars out of the pan using the parchment paper overhang. Cut into squares and serve chilled.
