Description

Enjoy a delightful pickled treat with a zesty blend of hard-boiled eggs, smoked sausages, spicy jalapeños, and crunchy carrots. This colorful dish is perfect for snacking, serving at parties, or as a unique addition to any meal.


Ingredients

  • 1 dozen hard-boiled eggs, peeled
  • 1 pound smoked sausages, sliced
  • 12 jalapeño peppers, sliced
  • 1 cup baby carrots
  • 1 cup white vinegar
  • 1 cup water
  • 1/2 cup sugar
  • 1 tablespoon salt
  • 1 teaspoon mustard seeds
  • 1 teaspoon celery seeds

Instructions

  • Prepare the brine: In a large pot or Dutch oven, combine the vinegar, water, sugar, salt, mustard seeds, and celery seeds. Bring to a boil over high heat.
  • Add the ingredients: Once the brine is boiling, add the eggs, sausages, jalapeños, and carrots to the pot.
  • Reduce heat and simmer: Reduce heat to low and simmer for 15 minutes, or until the vegetables are tender.
  • Cool and store: Remove the pot from the heat and let cool slightly. Transfer the pickled ingredients to a glass jar or jars. Seal the jar(s) and refrigerate for at least 24 hours before serving.

Notes

  • For a spicier pickle, use more jalapeños or add a few cayenne peppers to the brine.
  • If you don’t have smoked sausages, you can use regular pork or beef sausages.
  • Additional vegetables such as onions, bell peppers, or cucumbers can be added to the pickle mix.
