- 1 dozen hard-boiled eggs, peeled
- 1 pound smoked sausages, sliced
- 12 jalapeño peppers, sliced
- 1 cup baby carrots
- 1 cup white vinegar
- 1 cup water
- 1/2 cup sugar
- 1 tablespoon salt
- 1 teaspoon mustard seeds
- 1 teaspoon celery seeds
Instructions
- Prepare the brine: In a large pot or Dutch oven, combine the vinegar, water, sugar, salt, mustard seeds, and celery seeds. Bring to a boil over high heat.
- Add the ingredients: Once the brine is boiling, add the eggs, sausages, jalapeños, and carrots to the pot.
- Reduce heat and simmer: Reduce heat to low and simmer for 15 minutes, or until the vegetables are tender.
- Cool and store: Remove the pot from the heat and let cool slightly. Transfer the pickled ingredients to a glass jar or jars. Seal the jar(s) and refrigerate for at least 24 hours before serving.
Notes
- For a spicier pickle, use more jalapeños or add a few cayenne peppers to the brine.
- If you don’t have smoked sausages, you can use regular pork or beef sausages.
- Additional vegetables such as onions, bell peppers, or cucumbers can be added to the pickle mix.
