For the Crisps:

  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup grated Parmesan cheese

  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika (optional for extra flavor)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

For the Pimento Cheese Spread:

 

  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup mayonnaise
  • 1/4 cup diced pimentos, drained
  • 1 tablespoon cream cheese, softened
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon garlic powder
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven:
    a. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

  2. Make the crisps:
    a. In a medium bowl, combine the shredded cheddar cheese, Parmesan cheese, flour (optional), garlic powder, paprika, salt, and black pepper.
    b. Mix the ingredients together until well combined.
    c. Spoon small piles (about 1 tablespoon) of the cheese mixture onto the prepared baking sheet, spaced about 2 inches apart.
    d. Flatten each pile slightly into discs.

  3. Bake the crisps:
    a. Bake in the preheated oven for 8-10 minutes, or until the cheese crisps are golden and bubbly.
    b. Allow the crisps to cool for a few minutes on the baking sheet before transferring them to a wire rack to cool completely and crisp up.

  4. Make the pimento cheese spread:
    a. In a bowl, combine the shredded cheddar cheese, mayonnaise, diced pimentos, cream cheese, Dijon mustard, garlic powder, and a pinch of salt and pepper.
    b. Stir until smooth and well combined.

  5. Assemble the pimento cheese crisps:
    a. Once the cheese crisps are fully cooled and crisp, top each crisp with a dollop of the pimento cheese spread.

  6. Serve:
    a. Serve immediately as a savory snack or appetizer, and enjoy!
