    • 2 cups whipped topping (like Cool Whip), thawed
    • ½ cup sweetened shredded coconut, toasted
    • ¼ cup pineapple chunks (optional, for garnish)

Instructions

  1. Make the Crust: In a medium bowl, mix graham cracker crumbs, melted butter, and granulated sugar until combined. Press evenly into the bottom of a 9×13-inch baking dish. Chill in the refrigerator for 15 minutes to set.
  2. Prepare the Cream Cheese Layer: In a large bowl, beat softened cream cheese and powdered sugar with an electric mixer until smooth. Fold in 1 cup whipped topping and rum extract (or rum). Spread evenly over the chilled crust.
