- 2 (3.4 oz) boxes instant coconut cream pudding mix
- 3 cups cold milk
- 1 cup crushed pineapple, drained
- Topping:
- 2 cups whipped topping (like Cool Whip), thawed
- ½ cup sweetened shredded coconut, toasted
- ¼ cup pineapple chunks (optional, for garnish)
Instructions
- Make the Crust: In a medium bowl, mix graham cracker crumbs, melted butter, and granulated sugar until combined. Press evenly into the bottom of a 9×13-inch baking dish. Chill in the refrigerator for 15 minutes to set.
- Prepare the Cream Cheese Layer: In a large bowl, beat softened cream cheese and powdered sugar with an electric mixer until smooth. Fold in 1 cup whipped topping and rum extract (or rum). Spread evenly over the chilled crust.
- Mix the Pudding Layer: In another bowl, whisk together coconut cream pudding mix and cold milk for 2 minutes until thickened. Stir in drained crushed pineapple. Spread over the cream cheese layer.
- Add the Topping: Spread 2 cups of whipped topping evenly over the pudding layer. Sprinkle with toasted shredded coconut and garnish with pineapple chunks (if using).
- Chill & Serve: Refrigerate for at least 4 hours (or overnight) to set. Slice into squares and serve cold. Enjoy!
