- 1 1/2 cups all-purpose flour
- 1 cup rolled oats
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 1/2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 cup brown sugar
- 2 large eggs
- 1/2 cup vegetable oil
- 1 tsp vanilla extract
- 1 cup grated carrots (about 2 medium carrots)
- 1 cup crushed pineapple, drained
- 1/2 cup chopped walnuts or pecans (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
- In a large bowl, whisk together flour, oats, baking soda, baking powder, salt, cinnamon, and nutmeg.
- In another bowl, beat the eggs, then mix in brown sugar, vegetable oil, and vanilla extract.
- Stir the wet ingredients into the dry ingredients until just combined.
- Fold in grated carrots, crushed pineapple, and nuts if using.
- Pour batter into prepared loaf pan and smooth the top.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
- Make sure to drain the pineapple well to prevent soggy bread.
- Add raisins or shredded coconut for extra flavor.
- Store wrapped at room temperature for up to 3 days or freeze for longer storage.
