Description

A moist, wholesome bread packed with grated carrots, crushed pineapple, and oats — perfect for breakfast or a healthy snack.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup rolled oats
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 cup grated carrots (about 2 medium carrots)
  • 1 cup crushed pineapple, drained
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, whisk together flour, oats, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. In another bowl, beat the eggs, then mix in brown sugar, vegetable oil, and vanilla extract.
  4. Stir the wet ingredients into the dry ingredients until just combined.
  5. Fold in grated carrots, crushed pineapple, and nuts if using.
  6. Pour batter into prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cool in pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

  • Make sure to drain the pineapple well to prevent soggy bread.
  • Add raisins or shredded coconut for extra flavor.
  • Store wrapped at room temperature for up to 3 days or freeze for longer storage.
