- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract

- 1 cup crushed pineapple, drained
- Optional: 1/2 cup shredded coconut or chopped nuts
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the butter and sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in the drained crushed pineapple (and coconut or nuts if using).
- Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10–12 minutes or until the edges are lightly golden.
- Allow cookies to cool on the baking sheet for 2 minutes before transferring to a wire rack to cool completely.
Notes
- Make sure to drain the crushed pineapple well to prevent overly wet dough.
- These cookies stay soft for days when stored in an airtight container.
- Add a simple glaze made with powdered sugar and pineapple juice for extra sweetness.
