  • 1 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 1/2 cup whipped topping (like Cool Whip)

For the Topping:

 

  • 1/2 cup whipped topping (for garnish)
  • Pineapple chunks or pineapple slices (for garnish)

Instructions

  1. Prepare the Crust:

    • Preheat your oven to 350°F (175°C).
    • In a bowl, mix the graham cracker crumbs, sugar, and melted butter until combined.
    • Press the mixture into the bottom of a 9-inch pie dish, forming an even layer. Bake for 8-10 minutes, until the crust is golden brown. Remove from the oven and let it cool.
  2. Make the Filling:

    • In a mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
    • Gradually add the powdered sugar and vanilla extract, mixing until well combined.
    • Stir in the drained crushed pineapple, then fold in the whipped topping until the filling is smooth and fluffy.
  3. Assemble the Pie:

    • Once the crust has cooled, spread the cream cheese filling evenly over the crust.
    • Refrigerate the pie for at least 3 hours or until set.
  4. Garnish and Serve:

    • Before serving, top with a dollop of whipped topping and garnish with pineapple chunks or slices for extra flavor and a tropical touch.

Notes

  • If you prefer a thicker crust, you can add an extra 1/4 cup of graham cracker crumbs or increase the butter by 2 tbsp.
