Ingredients

Scale

Filling Ingredients

  • 1 cup fresh pineapple, finely diced
  • 1 tablespoon lime juice
  • 1 teaspoon lime zest
  • 1/4 cup shredded coconut
  • 2 tablespoons sugar
  • 1 tablespoon cornstarch or flour

Pastry Ingredients

  • Pie dough or puff pastry sheets (enough to cut shapes, approx. 1 package)
  • 1 egg, beaten (for egg wash)
  • Water or additional egg wash (for sealing edges)

Instructions

  1. Prepare the Filling: Start by finely dicing fresh pineapple, then combine it with lime juice, lime zest, shredded coconut, sugar, and cornstarch to create a thick, flavorful filling that won’t leak during baking.
  2. Roll Out the Dough: On a lightly floured surface, roll your pie dough or puff pastry to about 1/8 inch thickness to ensure a delicate, flaky crust that holds the filling perfectly.
  3. Cut and Fill: Use a round or square cookie cutter to cut shapes from the dough. Spoon a generous amount of filling onto half of each shape, leaving room around the edges for sealing.
  4. Seal the Edges: Brush the edges with a little water or egg wash, then fold the dough over to form a pocket. Press down firmly with a fork to seal and create a decorative edge.
  5. Brush and Bake: Brush the top of each hand pie with egg wash for a golden finish, then bake at 375°F (190°C) for 20-25 minutes or until the crust is golden brown and crisp.

Notes

  • Keep your dough cold to help create flaky layers and prevent shrinking during baking.
  • Use moderate amounts of filling to avoid leakage and soggy crusts.
  • Fresh pineapple and lime provide the best texture and vibrant flavor.
  • For a golden, shiny crust, don’t skip brushing on egg wash before baking.
  • Allow the pies to rest a few minutes after baking to set the filling for easier handling.
