Instructions

  1. Preheat the oven:

    • Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
  2. Prepare the dry ingredients:

    • In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon (if using).
  3. Mix the wet ingredients:

    • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
    • Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
    • Mix in the drained crushed pineapple and buttermilk, combining until everything is well incorporated.
  4. Combine the dry and wet ingredients:

    • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
    • Fold in the chopped nuts, if using.
  5. Bake the bread:

    • Pour the batter into the prepared loaf pan and spread it out evenly.
    • Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
