  • 1 can (20 oz) crushed pineapple, drained, with juice reserved
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar (for glaze)
  • 1 tablespoon pineapple juice (for glaze)
  • 1 tablespoon milk (for glaze)
  • 1/2 teaspoon vanilla extract (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. In a large bowl, combine the yellow cake mix, eggs, oil, vanilla extract, and drained pineapple (keep the juice for the glaze). Mix until smooth.
  3. Pour the cake batter into the prepared pan and spread it evenly.
  4. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for about 10 minutes.
  5. While the cake cools, make the glaze: In a small bowl, mix together powdered sugar, pineapple juice, milk, and vanilla extract until smooth.
  6. Once the cake has cooled slightly, poke holes all over the top using a fork or skewer.
  7. Pour the glaze evenly over the cake, allowing it to soak into the holes.
  8. Allow the cake to cool completely before serving. Optional: Top with whipped cream or fresh pineapple chunks for extra flair!

Notes

  • If you want an extra layer of tropical flavor, try adding shredded coconut to the cake batter or on top as a garnish.
  • This cake can also be made in advance. Just store it in the fridge for up to 3 days.
