Ingredients
Scale
- 2 cups shredded sweetened coconut
- 1/4 cup unsalted butter, softened
- 1/4 cup sweetened condensed milk
- 1 teaspoon vanilla extract
- 1 1/2 cups powdered sugar
- 1 cup white chocolate chips
- Red or pink food coloring (optional, for a festive pink hue)
Instructions
- Make the Coconut Filling:
In a large bowl, combine the shredded coconut, softened butter, sweetened condensed milk, and vanilla extract. Stir until the mixture is well combined and smooth. Gradually add in the powdered sugar, a little at a time, until the mixture thickens and can be easily rolled into balls. - Shape the Hearts:
Line a baking sheet with parchment paper. Roll the coconut mixture into small balls and then gently flatten each ball into a heart shape using your fingers or a heart-shaped cookie cutter. Place the coconut hearts onto the prepared baking sheet. - Chill the Coconut Hearts:
Refrigerate the coconut hearts for at least 30 minutes to firm up. - Prepare the Coating:
In a microwave-safe bowl, melt the white chocolate chips in the microwave, stirring every 30 seconds until smooth and completely melted. Add a few drops of red or pink food coloring, if desired, to tint the chocolate pink. - Coat the Coconut Hearts:
Once the coconut hearts have chilled and firmed up, dip each heart into the melted pink chocolate, ensuring it is completely coated. Use a fork to remove the heart from the chocolate, letting any excess chocolate drip off. - Set the Coating:
Place the chocolate-coated coconut hearts back onto the parchment paper and allow them to set for 30 minutes or until the chocolate is firm. - Serve and Enjoy:
Once the chocolate has hardened, the Pink Creamy Coconut Hearts are ready to be served! Store them in an airtight container at room temperature or in the refrigerator.
Notes
- If you prefer, you can dip the hearts in regular white chocolate without the food coloring.
- You can also decorate the hearts with sprinkles or drizzle additional chocolate on top for added flair.
- These hearts make wonderful Valentine’s Day gifts when placed in a decorative box or bag.
- If you don’t have a heart-shaped cookie cutter, simply form the coconut mixture into balls and press them into flat discs.
