Description

Instructions

  1. Prepare the filling: In a food processor or blender, combine the cooked pinto beans, sugar, maple syrup, coconut milk, coconut oil, cornstarch, vanilla extract, cinnamon, nutmeg, ginger, cloves, and salt. Blend until completely smooth.
  2. Transfer to the crust: Pour the smooth pinto bean mixture into the pre-baked pie crust. Smooth out the top with a spatula.
  3. Bake the pie: Preheat your oven to 350°F (175°C). Place the pie in the oven and bake for 35-40 minutes, or until the pie is set and the top is slightly golden.
  4. Cool: Let the pie cool to room temperature, then refrigerate for at least 2-3 hours to allow the filling to firm up.
